Delicious vegan Jalapeno Cornbread Poppers




We've borrowed a vegan recipe book from a sweet sweet friend of mine!
Wonderful recipes...
We tried it, changed it a bit :) and there you have it :P

20-35 min

Ingredients
For two people (app 24 poppers):

Dry ingredients:
1 cup of cornmeal (I used cornflour)
1 cup of white flour
1 teasp. salt
4 teasp. baking powder
1 tablesp. sugar

"Wet" ingredients:
2/3 cup of  rice milk (or soya or almond)
1/2 Jalapeno (seeded, finely chopped)
1/2- 1 cup of corn (fresh, frozen or canned)

Oil for cooking (I use coconut oil)
Mustard for dipping
Veggies (avocado, tomato, cucumber, etc), or french fires for side

The magic
1. Mix the dry and wet ingredients in two separate bowls.
2. Then mix them together until all well combined (it will be quite softy but manageable consistency)
3. Using your palm (with some wet hands) form small balls
4. Heat up the oil (test it if it sizzles) and fry the poppers until they are golden brown :)
5. Drain the oil from them with paper and serve it with mustard and fresh veggies
