Simple and rewarding pancakes

Looking for simple breakfast options? Well here's your answer. :) Base vegan pancakes that can be rolled/supplied with any fruit/jam/nuts of your choice. Got the inspiration and base recipe from a great Lithuanian vegan food blog kavalgoveganai.lt

Time
15-20 min

Ingredients
For two people:

A cup of flour
Half of a cup of soy/rice/almond milk
Half of a cup of water 
A small dash of baking powder
Some fresh, finely chopped vanilla
3 spoons of sugar (both brown and birch work well)
A dash of salt
Coconut fat/oil (or other high "smoke point" oil)
 
The magic
Grab a bowl and mix all of the ingredients in it. The consistency will affect the end result - if you want really thin, rollable pancakes, add more milk/water. Otherwise, the given mixture will produce pancakes similar to the ones in the picture above. Preheat your pan with some oil in it to medium heat. Grab a bigger spoon and pour the mix. Flip the pancakes when time is right and don't let them burn. :)

That's about it. While the cakes are frying, cut some fruit or roast some nuts. They go great with agave syrup, too!

  1. Nice recipe, it seems very easy!
    Some easy improvements: a tip of baking soda and a teaspoon of wine vinegar.
    Also, replace the coconut oil with more stable oils, like refined sunflower or extra virgin olive oil (although the latter gives a strong flavour)
