Simple and delicious Vegan Jacket Potato





Jacket Potato

First time I ate Jacket Potato was in England, and I really liked it :) Ever since as a Vegan, I still love it and experiment with making the filling in different ways (some with garlic sauce, some with vegan cheese, some with guacamole, some with home-made pesto, etc etc). 

Time
Approx. 45-60 min (Depends on the size of the potatoes)

Ingredients
For 2 people 
  • 4 big potatoes
  • some oil (rape/ coconut/ olive)
  • aluminum foil
  • salt
    Filling choices:
  • 1 avocado
  • Fresh vegetables (tomatoes, cucumber, radish, peas, corn, paprika, salads, etc etc)
  • Vegan cheese
  • Toasted nuts
    Sauce choices:
  • Beans in tomato sauce
  • Vegan garlic sauce (Recipe)
  • Mustard/ Chili sauce/ Olive oil/ Home-made guacamole/ pesto etc.


The Magic

1. Preheat the oven to 200C, wash the potatoes (don't peel!), rub them with little oil and salt, wrap them in aluminium foil and place them in the oven.
2. Until you wait for the potatoes, chop the veggies and make the sauces (pesto, garlic, guacamole, etc.)
3. After around 30 min open the oven, grab a knife and "stab" the potatoes (make some decent holes on the potatoes, so the heat reaches the middle part- make around 4-5 holes)
4. Regularly check the potatoes (with a fork or knife), and you know its done if the knife goes thru smooth and easy.
5.  If done, take the aluminium foil off, and bake it on high (225C) for about 5-10 minutes, to make the skin crispy.
6. After 5-10 min take the potatoes out cut them in half and stuff them with the chopped filling, and top it with the chosen sauce or vegan cheese.

Tips
1. It may take longer than 60 min if the potatoes are big or the oven is not very powerful. So be patient and give time for it... :) Snack on some nuts til you wait :P
