The Ultimate Vegan Banana Bread

Ok, so this is my first post and it happens to be a recipe :). I love banana bread and ever since I am going down on the vegan-eating road, this is one of the best cake recipes I have. Love it. Simple, tasty and only a few ingredients required. Enjoy it :)!!! And pls comment below (if Lukas turns it on :P)! Yeyyyy!

Ingredients

•   200g Plain flour (or use Self-rising flour and reduce the Baking powder to 2 heaped tsp)
•   1 heaped tsp Baking powder 
•   50-100g Stevia or any sugar you feel like using
•   1/2 tsp Cinnamon (if u want add more but careful it may make it bitter!)
•   4 large Black bananas, mashed
•   75g Coconut Fat (melt it before add) or any veggy oil (weight)
•   50g Mixed Nuts or dried/fresh fruits (optional) - I usually use nuts :)

The Magic

1.  Mash the peeled bananas with a fork. Mix well with oil and sugar.
2.  Add the flour, baking powder and cinnamon, and combine well.
3. Add any additional ingredients.
4. Pre-heat the oven to 200 C.
5. Grease (with some coconut fat) loaf tin
6. Bake it for 20min, before checking. Bake for app. another 40 min (depends on the oven)

Time

70- 75 min (10-15 min preparation, app. 60 min baking)

Tips

1.     How do you know it’s done? Check by sticking a knife into it (if it goes in-out without anything sticks to it that it’s done)
2.    Cover with foil, if the top of the cake is browning too fast and lower the temperature
3.    Allow to cool a little before slicing.
